  • 2 cups all purpose flour
  • 1½ tbs baking powder
  • 1 scoop UP2U protein powder
  • ¼ cup maple syrup
  • 1¼ cups milk
  • 2 large eggs
  • ¼ cup coconut oil or butter, melted (extra for pan)
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • 1/2 cup white chocolate chips

Directions

  1. Heat oven to 425°F.
  2. In a large bowl, stir together the flour, baking powder and UP2U protein powder.
  3. Add the maple syrup, milk, eggs, vanilla extract and oil/butter, and mix until just combined.
  4. Spray or coat a 9 x 13 inch baking pan with coconut oil or butter. Pour the batter into the baking pan and sprinkle with blueberries and white chocolate.
  5. Bake for 15-18 minutes. Allow to cool a bit before eating.
