  • 2 tablespoons avocado oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 12 large eggs
  • 1 cup heavy cream or milk
  • 3 scoops UP2U unflavored protein powder
  • 1 cup shredded sharp cheddar cheese
  • 2 ½ cups spinach
  • ⅓ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. In a skillet, add the avocado oil and sliced onions. Cook on medium-high heat until fragrant and softened, about 5-8 minutes. Add the garlic and cook for another minute. Set aside.
  3. In a large mixing bowl, whisk the eggs until thoroughly combined. Mix in the heavy cream, UP2U unflavored protein powder, shredded sharp cheddar cheese, salt, and pepper. Stir in the spinach.
  4. Scatter the cooked onions evenly across the bottom of a deep, greased, 12-inch round skillet. Pour the egg mixture on top. Stir everything together until it is evenly spread in the dish. Sprinkle the top with the grated Parmesan cheese.
  5. Bake at 350°F for approximately 50 minutes, or until the internal temperature reaches at least 160°F and the eggs are fully set with no visible liquid remaining.
  6. Remove from the oven and rest for 10-15 minutes before serving. Serve warm.
